This is a proven recipe for amazing sous vide pork neck schnitzel juicy on the inside and crispy on the outside.
Ingredients

- Pork neck 1 kilo
- Spices (to your liking)
Method
- 
Slice the meat into steaks, beat them up lightly and rub with spices and salt to your liking.
- 
Fill vacuum bags by two steaks each and vacuumize them.
- 
Cook in a sous vide cooker for 3 hours at 65 degrees.
- 
At the end of the cooking time, chill them in an ice water and shelve into a fridge overnight.
- 
It can also be made au gratin or grilled if you like it that way.
